  12. Smell: The Bastard Stepchild of the Senses • The sense

    of smell is processed by the limbic system which manages memory and emotion. • Connections between the brain’s smell and language areas are weak; which is why it is hard to describe smells. • Smell + Taste = Flavor. Flavor is 80% smell. • Loss of the sense of smell (anosmia) is one of the earliest signs of neurodegenerative diseases of the brain. It presents as loss of appetite and/or the inability to detect spoiled food, natural gas and smoke. • Up to 2% of the North American population has a smell disorder (congenital anosmia and acquired anosmia). This statistic isn’t exact as smell loss is under-reported. • The sense of smell was given more attention after Axel and Buck won the Nobel prize (2004) and Zicam Nasal Spray Gel (sold from 1994-2004) was associated with anosmia. • Olfactory calisthenics change the brain. This is most notable in perfumers who continue to smell well later in life. This makes a strong case for the connoisseurship of smell…
  13. Smell Facts • Some people have a better sense of

    smell than others, (females win over males in this department because they are child bearers). • Some people have specific anosmias (men are not genetically predisposed to smell musk, a lesson for ladies trying to lure men with perfume). • Some people have upper respiratory issues that cause temporary/permanent anosmia, (viruses, nasal polyps, etc.). • The sense of smell is given the least amount of attention in curriculum; from grade school to grad school. It’s a bias in our overly sanitized, visually dominant culture. • When a child is born doctors test for all senses except smell. Dr. Leslie Vosshall, of The Rockefeller University’s Vosshall Lab, says that it is possible to conduct this test, but it is not routinely performed at birth. • Multisensory learning is used in classroom settings that embrace children with learning disabilities. This method works just as well with “normal” children and adults.

  15. Smell Mapping: The Path to Understanding Aroma • Smell Mapping

    is a tool designed to assist in the formation of an olfactory/gustatory vocabulary. • Developed for olfactory writing workshops at 826Michigan and the Ann Arbor District Library (ongoing, next one is on Saturday, June 8th from 1-4pm at the downtown branch). • A “Smell Map” is a visual tool for recording sensory impressions. It trains the mind to evaluate versus react to an aroma. • Children, especially those on the lower end of the autism spectrum, do incredible well with this type of exercise. Unfortunately, there is little research in this area and plenty of autism “stereotyping”.* *See March 2013 posts on Glass Petal Smoke for specifics.
  16. Know Your Nose and Actualize Your Inner Guru of Smell

    • Stimulus leads to sensation which in turn leads to perception. • Fragrance and flavor wheels provide words to help you describe what you perceive. • Google image a flavor wheel of your favorite food and/or beverage and train yourself using the method you learn tonight. • Smell is a personal olfactory narrative derived from autobiographical memory. • Know your nose. A sensory “expert” may have knowledge, but they don’t have your life experience. Om shanti smell…
  17. Whiskey and the Perfume of Peat • Smoke notes are

    found in the feinty, peaty and woody categories of the whiskey flavor wheel. • Moss, tobacco and leather are notes commonly called out in smoky single malt whiskies (from Scotland, hence whisky vs. whisk“e”y). • Peat-fueled fires dry the damp malt, incensing the barley used to make whisky. Tres parfum… • Smoke notes in perfumery are found in woody and oriental categories in fine fragrance. These categories hearken back to the use of incense (in worship/prayer) and the donning of scented leather gloves, (the latter inspired the perfuming of human skin in Europe). • Oakmoss is a lichen used in perfumery. It imparts the aroma of a damp forest floor with notes of hay, sap and brine. It is a critical component of the “chypre” family of fragrances inspired by Francois Coty in 1917.
  18. Time for the Smell and Tell • An aroma will

    be presented to the audience on fragrance blotters. • You might be asked to Flehmen your fragrance blotter; smell with your mouth slightly open, using an estrous- seeking animal behavior, to induce retronasal olfaction. Wine tasters use this method to detect the flavor of wine in a glass w/o drinking it.* • The raw material will be revealed and sensory impressions shared. • If there is time to smell a second material, we will!
  19. How to Smell Using a Perfume Blotter • Shake the

    blotter and allow the alcohol to evaporate so the essential oil can bloom. • Bend the scented tip of the blotter horizontally (about one inch) so you can smell across a large surface. • Find a distance between your nose and the blotter that allows you to smell well and comfortably. Do not touch your nose with the blotter. • Let yourself “feel” the smell versus guessing what it is. This will help you find words to describe the smell. • Write down key words and phrases that you associate with the smell. If a specific memory comes up, feel free to write that down as well. • Keep successive blotters separate from each other so there is no cross-contamination between aromas.
